- 2 cups whole wheat flour
- 1/3 cup organic brown sugar or maple syrup
- 2 teaspoons ground cinnamon
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon pink himalayan sea salt
- 1/2 cup unsweetened plant milk
- 1 teaspoon pure vanilla extract
- 1/4 cup coconut oil, melted plus some for greasing
- 3 medium-sized bananas, mashed
- 3 medium-sized carrots, grated
- 3/4 cups nuts, raw, chopped any kind, optional

Instructions
- Grease a 1.5 qt/1.4 L loaf pan with coconut oil.
- Preheat oven to 350 degrees F.
- Prepare dry and wet ingredients in two separate bowls. Give each a good stir to distribute flavors and components evenly.
- Add the wet mixture to the dry and mix until well combined.
- Pour into the prepared pan and bake for 50-60 mins or until a toothpick comes out clean when inserted in the middle.
