- 2 tablespoons flax seeds, ground
- 6 tablespoons water
- 1 cup flour, chickpea or red split lentil or spelt
- 2 1/2 cups oats, rolled old fashioned or quick
- 1/2 cup flour, whole wheat or all purpose
- 1 teaspoon baking powder
- 1 teaspoon cinnamon, ground
- 3/4 cup coconut oil melted (on microwave with other wet ingredients)
- 3/4 cup Maple syrup
- 1/4 cup unsweetened plant milk
- 2 teaspoons pure vanilla extract
- 1 cups chocolate, baking unsweetened or semi-sweet, chopped or chips

- Preheat oven to 375 degrees.
- Prepare flax eggs by mixing water into the flax seeds on a small bowl. This needs to rest at least 10 minutes to get thick and gloopy.
- Combine all dry ingredients in a bigger bowl. Mix until well combined.
- Put all wet ingredients in another bowl. Warm up in a microwave for 30 seconds if using solid coconut oil so you can whisk it all together.
- Add flax eggs and wet ingredients to dry. Mix until well combined. Allow to cool before adding in chocolate chips and distribute evenly.
- Measure 2 tablespoons of dough balls and press onto baking sheet to your desired thickness.
- Bake for 10 - 15 minutes, until lightly browned around the edges.
